Cook Time: 1 hour 45 minutes
Servings: 12 (about 6 cups)
Ingredients
-
4 to 5 lbsGood Nature® Bone-In Pork Butt, cut into 6 pieces
-
2 tbspbrown sugar
-
2 tspkosher salt
-
1 tbspfreshly ground black pepper
-
½ tspcayenne
-
1 tbspvegetable oil
-
6 clovesgarlic, peeled
-
1 cupchicken broth
-
¼ cupapple cider vinegar
In a small bowl, combine brown sugar, salt, pepper, and cayenne; toss pork pieces in to coat.
Turn Instant Pot to sauté and add half the oil and half the pork. Cook until browned on all sides, about 5 minutes. Remove from pot and repeat with remaining oil and pork. Return the pork to the pot and add the remaining ingredients. Follow manufacturer’s guide for locking the lid and cook on high pressure for 1 hour.
Follow quick release directions and transfer pork to a large bowl. Return Instant Pot to sauté setting and simmer until juices are reduced by half, about 15 minutes. At the same time, use two forks to shred the pork. Add 1 cup of reduced cooking liquid to pork and season with additional salt to taste.
Note: If you do not have a pressure cooker, you can use a slow cooker. Season the pork as instructed above and brown in a skillet. Transfer pork to slow cooker, deglaze the skillet with the broth and pour all the browned bits and broth into the slow cooker. Add the vinegar and cook on HIGH for 4 to 5 hours or LOW for 8 to 9 hours.
