Blistered Carrots

  • 1 lb
    multi-colored carrots, cut into ¾” matchsticks
  • 1 ½ tbsp
    olive oil
  • 1 tbsp
    whole coriander seeds
  • 1 tbsp
    maple syrup
  • ½ tsp
    kosher salt
  • ¼ tsp
    freshly ground black pepper
  • ¼ tsp
    aleppo or korean pepper
  • 1 tbsp
    cilantro, chopped

Preheat oven to 400°F.

Over high heat in a large skillet, add the oil, coriander seed, and carrots and cook, stirring frequently, until the carrots brown and blister in spots. Toss the carrots with the maple syrup, salt, and pepper and spread the carrots into a single layer.

Transfer the pan to the oven and roast until tender, about 12 to 15 minutes. Remove from oven and sprinkle with aleppo or korean pepper and cilantro and serve.
