Campfire Beans

  • (1) 12 oz pkg
    Good Nature® Applewood or Pecan Smoked Bacon, diced
  • 1 large
    onion, diced
  • 2 large
    jalapeños, seeded & minced
  • 3 cloves
    garlic, minced
  • 2 tsp
    freshly ground black pepper
  • 1 tsp
    fresh thyme, chopped
  • 1 tsp
    ground cumin
  • 1 tsp
    red pepper flakes
  • (2) 16 oz cans
    pinto beans, thoroughly drained
  • 2 cups
    BBQ sauce
  • ½ cup
    chicken stock or broth
  • 1
    bay leaf
  • 1 pinch
    kosher salt

In a large saucepan over medium-high heat, sauté bacon until golden brown, about 10 minutes. Add the onion, jalapeno, and garlic and cook 3 minutes, stirring often. Add the remaining ingredients and stir to combine. Once the mixture has been brought to a boil, lower heat to medium-low and simmer for 45 minutes or until thickened.

Remove from heat and allow to cool for 10 minutes. Remove and discard the bay leaf. Taste and season with salt, as needed. Serve and enjoy.
