Four Cheese Mac ‘n’ Cheese with Buttery Crumble

  • 3 cups
    macaroni, uncooked
  • ⅓ cup
    all-purpose flour
  • 2 ⅔ cups
    1% low-fat milk
  • ½ cup
    fontina cheese, shredded
  • ½ cup
    parmesan cheese, grated
  • ½ cup
    extra-sharp cheddar cheese, grated
  • 3 oz
    american cheese or velveeta
  • ½ tsp
    kosher salt
  • ¼ tsp
    freshly ground black pepper


  • ⅓ cup
    garlic croutons, crushed
  • 1 tbsp
    butter, melted
  • 3
    scallions, minced

Cook macaroni according to package directions; set aside.

Preheat oven to 375°F. In a large saucepan, add flour and gradually whisk in milk until blended. Cook over medium heat until thick, about 8 minutes, stirring constantly with a whisk. Remove from heat and stir in cheeses until melted. Stir in cooked macaroni, salt, and pepper. Spoon mixture into a 9” x 13” baking dish coated with cooking spray.

In a small bowl, combine crumble ingredients. Sprinkle over macaroni mixture. Bake at 375°F for 30 to 40 minutes or until bubbly and golden brown on top. Remove from oven and let cool 5 minutes before serving.
