
General Tso’s Pork

BATTER INGREDIENTS

¼ cupsoy sauce

1 largeegg, beaten

1 cupcorn starch
SAUCE INGREDIENTS

½ cupcorn starch

¼ cupwater
-
1 ½ tbspgarlic, minced

¾ cupsugar
-
½ cupsoy sauce

¼ cupoyster sauce
-
½ cupwhite wine
-
14 ozchicken stock or broth
ASSEMBLY INGREDIENTS

4 cupspeanut oil (plus 2 tbsp for wok)

4 to 4 ½ lbGood Nature® Boneless Pork Loin, cut into 1” cubes

¼ cupdried bird’s eye chilies

½ cupcarrots, spiralized

½ cupzucchini, spiralized

1 tbspsesame seeds
In a large bowl, combine all batter ingredients except pork and peanut oil; whisk thoroughly and set aside. In another large bowl, combine all sauce ingredients.
In a deep cast iron skillet over medium-high heat, heat peanut oil until about 350°F. Working in small batches, dredge pork in batter and fry about 5 to 6 minutes; removing from oil with a slotted metal spoon or spider to a plate lined with paper towels.
In a large wok or skillet over high, heat 2 tablespoons oil until just starting to smoke. Add chilies, scallions, carrots, and zucchini and stir constantly for about 1 minute. Add sauce and bring to a boil, about 30 seconds. Add pork, stirring constantly until sauce thickens, about 2 to 3 minutes. Add sesame seeds and serve.
