Grilled Pork & Melon Salad

  • 4
    Good Nature® Boneless Pork Loin Chops, cut ¾” thick (see note)
  • 3 tbsp
    extra-virgin olive oil, divided
  • pinch
    kosher salt & freshly ground black pepper
  • 1
    peppermint tea bag (contents only, about 1 tsp)
  • 4 cups
    cantaloupe, honeydew, and/or watermelon, peeled & chopped
  • 2 tbsp
    lime juice
  • 2 tbsp
    fresh mint, chopped
  • ½ cup
    feta, crumbled
  • 1 pinch

Preheat grill to high. Rub chops with 1 tablespoon of olive oil and peppermint tea. Season with salt and pepper; set aside.

In a large bowl, combine melon, lime, mint, 2 tablespoons olive oil, and feta. Season with salt, pepper, and cayenne; set aside.

Grill chops about 3 to 5 minutes per side. Move chops to a cooler part of the grill and continue cooking until internal temperature reaches 145°F in the thickest part of the meat, about 2 to 4 minutes. Serve with the melon salad.

Note: To cut chops, place the loin fat side up on a cutting board. Using a sharp knife, cut perpendicular to the loin. Be sure to cut chops that are consistent in thickness to ensure even cooking.
