Honey BBQ Pulled Pork Tater Tots

    Good Nature® Pork Tenderloins, each cut into 3 equal sized pieces
  • 3 tbsp, each
    kosher salt & freshly ground black pepper
  • 3 tbsp
    cumin, ground
  • 3 tbsp
  • ½ cup
    brown sugar
  • 2 cups
    honey bbq sauce
  • 2 lbs
    frozen tater tots
  • 2 cups
    cheddar or jack cheese, shredded
  • 1 cup
    green onions, thinly chopped

Preheat slow cooker to HIGH.

In a small bowl, combine salt, pepper, cumin, paprika, and brown sugar. Rub pork tenderloin with mixture. Place pork and BBQ sauce into slow cooker. Cook for 5 hours or until fork tender. Shred with a fork and return to slow cooker to keep warm.

While pork finishes cooking, bake tater tots as directed.

Preheat oven to 400°F.

In a large casserole dish, stack tater tots, shredded honey BBQ pork and cheese. Bake for 7 to 9 minutes until cheese is melty. Top with green onions and serve immediately.
