
Instant Pot Split Pea Soup

Rib Meat & Broth Ingredients

1Good Nature® Pork Loin Backrib, cut into 3 equal sections

1 tbsp, eachkosher salt & freshly ground black pepper

Split Pea Soup Ingredients

1 cupwater
-
1 mediumyellow onion, diced

3 mediumcarrots, peeled & diced

3 stalkscelery, diced

4 clovesgarlic, minced

¼ tspthyme, dried

¼ tsp, eachkosher salt & freshly ground black pepper

1 lbsplit peas, rinsed & sorted (no rocks!)
Places backribs and water into the Instant Pot. Follow manufacturer’s guide for locking the lid and cook on high pressure for 30 minutes. Follow quick release directions and transfer pork to a large bowl. Remove meat from bones, shred, and set aside. Reserve all liquid for pork stock.
Turn Instant Pot to sauté and add all of the pork stock, water, onion, carrot, celery, garlic, and thyme. Sauté for 8 minutes. Add shredded rib meat and split peas; stir. Cancel sauté function, follow manufacturer’s guide for locking the lid, and cook on high pressure for 20 minutes. Follow natural release directions and release valve after 20 minutes. Taste and add additional salt as needed.
