
Korean Spiced Pork Kebabs

Ingredients

1Good Nature® Pork Tenderloin, cut into 1” chunks

3 tbsprice vinegar, divided

1 ½ tbspgochujang

1 tbsphoney
-
1 tbspsoy sauce
-
¾ tspfreshly ground black pepper, divided

1 largemango, peeled, pitted & diced
-
½english cucumber, diced (or 2 persian cucumbers)

½ tspkosher salt
-
1 tbspsafflower or canola oil
-
2 tbspmint, chopped
-
1 tbspcilantro, chopped

2 cupssteamed rice
In a large bowl, combine pork, 1 tablespoon vinegar, gochujang, honey, soy sauce, and ½ teaspoon pepper. Toss to mix and marinate 30 minutes at room temperature. While the pork is marinating, preheat the grill to high.
In a medium bowl, combine the mango, cucumber, salt, oil, mint, cilantro, and remaining pepper and vinegar. Set aside.
Thread the pork onto skewers, sprinkle with salt and grill about 5 to 6 minutes, turning occasionally. Serve with the rice and mango salad.
