Korean Spiced Pork Kebabs

    Good Nature® Pork Tenderloin, cut into 1” chunks
  • 3 tbsp
    rice vinegar, divided
  • 1 ½ tbsp
  • 1 tbsp
  • 1 tbsp
    soy sauce
  • ¾ tsp
    freshly ground black pepper, divided
  • 1 large
    mango, peeled, pitted & diced
  • ½
    english cucumber, diced (or 2 persian cucumbers)
  • ½ tsp
    kosher salt
  • 1 tbsp
    safflower or canola oil
  • 2 tbsp
    mint, chopped
  • 1 tbsp
    cilantro, chopped
  • 2 cups
    steamed rice

In a large bowl, combine pork, 1 tablespoon vinegar, gochujang, honey, soy sauce, and ½ teaspoon pepper. Toss to mix and marinate 30 minutes at room temperature. While the pork is marinating, preheat the grill to high.

In a medium bowl, combine the mango, cucumber, salt, oil, mint, cilantro, and remaining pepper and vinegar. Set aside.

Thread the pork onto skewers, sprinkle with salt and grill about 5 to 6 minutes, turning occasionally. Serve with the rice and mango salad.
