
Poblano & Blackberry Pork Candy

Ingredients

1 ½ lbGood Nature® Boneless Pork Loin*, sliced into randomly shaped 1” pieces

1 tbspkosher salt

1 tbspfreshly ground pepper

2 tbspvegetable oil

1poblano pepper, seeded & finely diced

1 cupblackberry jam
-
½ cupdark brown sugar

2 tbsphoney
In a medium sauce pan over medium low heat, combine poblano pepper, jam, brown sugar, and honey. Bring to a boil, stirring occasionally, and remove from heat when sugar dissolves.
Season pork with salt and pepper. In a nonstick skillet over medium high heat, add oil and sear pork in batches, about 4 to 5 minutes for each batch. Remove pork to a plate and rest until all pork is seared.
Increase heat to high and add 2 tablespoons of jam mixture and a few pieces of pork to skillet. Sauté until jam is bubbling and has coated all sides of pork. Remove pork candy from pan and continue to cook in small batches until all pork has been coated. Serve and enjoy!
NOTE: If you purchased a whole or half pork loin, slice the rest into chops or roasts and freeze for later use.
