
Pork Chops with Mint Pesto

Ingredients

1 lbGood Nature® Thick Cut Pork Loin Chops

½ cupmint leaves, packed

2 tbspflat leaf parsley leaves

1 tbspwhole almonds or cashews

1 ½ tsplemon juice

1 tsplemon zest, finely grated

4 tbspextra virgin olive oil, divided

1 ¼ tspkosher salt, divided
-
¼ tspfreshly ground black pepper
-
1 tspcumin, ground
-
½ tspaleppo or korean pepper
-
¼ cupplain greek yogurt
Preheat grill or broiler to high. In a small food processor, combine mint, parsley, almonds, lemon juice, and lemon zest. With the motor running, drizzle 3 tablespoons of olive oil. Season with ¼ teaspoon salt and black pepper.
Rub the chops with the remaining tablespoon olive oil, one teaspoon salt, cumin, and Aleppo or Korean pepper. Grill chops until browned, about 3 to 4 minutes on each side or until internal temperature reaches 145°F in the center.
To serve, top each chop with pesto and a dollop of yogurt.
