Pork Chops with Mint Pesto

  • 1 lb
    Good Nature® Thick Cut Pork Loin Chops
  • ½ cup
    mint leaves, packed
  • 2 tbsp
    flat leaf parsley leaves
  • 1 tbsp
    whole almonds or cashews
  • 1 ½ tsp
    lemon juice
  • 1 tsp
    lemon zest, finely grated
  • 4 tbsp
    extra virgin olive oil, divided
  • 1 ¼ tsp
    kosher salt, divided
  • ¼ tsp
    freshly ground black pepper
  • 1 tsp
    cumin, ground
  • ½ tsp
    aleppo or korean pepper
  • ¼ cup
    plain greek yogurt

Preheat grill or broiler to high. In a small food processor, combine mint, parsley, almonds, lemon juice, and lemon zest. With the motor running, drizzle 3 tablespoons of olive oil. Season with ¼ teaspoon salt and black pepper.

Rub the chops with the remaining tablespoon olive oil, one teaspoon salt, cumin, and Aleppo or Korean pepper. Grill chops until browned, about 3 to 4 minutes on each side or until internal temperature reaches 145°F in the center.

To serve, top each chop with pesto and a dollop of yogurt.
