Prosciutto Wrapped Tenderloin with Grilled Peaches & Balsamic Glaze

  • 1
    Good Nature® Pork Tenderloin
  • 1 pinch
    kosher salt & freshly ground black pepper
  • 4 to 6 pieces
  • 2 tbsp
    olive oil
  • 3 medium
    peaches, stone removed & cut into ½” slices
  • 3 tbsp
    balsamic glaze

Preheat oven to 375°F.

Pat pork tenderloin dry with paper towels and sprinkle with salt and pepper. Lay out prosciutto slices so they are just over lapping, Place tenderloin in center and wrap, leaving a seam on one side.

Add oil to a large ovenproof skillet over high heat. Sear tenderloin seam side down first, then sear on the remaining sides. Transfer skillet to oven and roast uncovered, in oven about 20 minutes or until internal temperature reaches 145°F in the thickest part of the meat. Remove to cutting board and let rest at least 5 minutes.

In a lightly oiled grill pan over high heat, grill peach slices about 1 minute each side. Remove from pan and dice. To serve, slice tenderloin, top with peaches, and drizzle with balsamic glaze.
