Southern Fried Pork & Waffles

Ingredients

  • 1 3-4 lb
    Good Nature® Boneless Pork Loin, cut into 2” randomly shaped chunks
  • 1.5 liters
    vegetable oil (for frying)
  • 2 cups
    whole milk
  • 3 tbsp
    smoked paprika, divided
  • 2 tbsp
    cumin, ground, divided
  • 2 tbsp
    chipotle powder
  • 2 tsp
    kosher salt
  • 2 tsp
    freshly ground black pepper
  • 4 cups
    all-purpose flour
  • 8
    Belgian waffles
  • 8 tbsp
    butter
  • 1 cup
    maple syrup

Add oil to fryer or deep cast iron skillet leaving oil at least 1.5” from the top to ensure it does not spill over. Heat to 375°F.

In a large bowl, combine milk with 1 tablespoon paprika and 1 tablespoon cumin. Place the pork chunks into the seasoned milk and let sit for 10 minutes.

In another large bowl, combine flour, 2 tablespoons paprika, 1 tablespoon cumin, chipotle powder, salt, and pepper. Dredge pork chunks in seasoned flour mix, shake off excess flour, and place on a plate or baking pan until ready to fry.

Working in batches, add 3 to 4 pieces of pork to the oil and fry for 4 to 5 minutes or until golden brown and cooked to an internal temperature of 145°F.

Heat waffles as directed. Top warm waffles with butter, 2 pieces of fried pork, maple syrup, and a pinch of smoked paprika.
