Steakhouse Creamed Spinach

  • 3 tbsp
  • 2 medium
    shallots, finely minced
  • 2 cloves
    garlic, minced
  • 1½ cups
    heavy cream
  • (2) 16oz bags
    frozen spinach, defrosted & drained
  • 1 cup
    parmesan cheese, finely grated
  • 2 pinches
    ground nutmeg
  • 1 pinch
    kosher salt & freshly ground pepper

In a Dutch oven or large saucepan over medium-high, add butter and shallots and sauté about 5 minutes or until lightly browned. Add garlic and cook, stirring often, about 2 additional minutes.

Slowly stir in heavy cream. Bring to a simmer, stirring often. Add parmesan and nutmeg; cook until sauce begins to thicken, about 3 minutes. Reduce heat to medium-low, add spinach, and stir to combine. Season with salt and pepper to taste and serve.
