Strawberry Balsamic Glazed Pulled Pork Shortcake

Cook Time: 4 to 5 hours (HIGH) or 8 to 9 hours (LOW) + 15 minutes
1 4-5 lbGood Nature® Bone-In Pork Butt, cut into 1 ½” slices
3 tbsp, eachkosher salt & freshly ground black pepper
1 ½ cupswater
2 cupsstrawberry jam
1 cupbalsamic glaze
1 ½ cupsstrawberries, diced, divided
2 packagesshortcake cups or pound cake cut into 1” slices
1 cupwhipped cream
Preheat slow cooker to HIGH. Season pork with salt and pepper. Add pork and water to slow cooker. Cook on HIGH for 4 to 5 hours or on LOW for 8 to 9 hours or until meat is fork tender. Shred pork and return to slow cooker to keep warm.
In a large sauté pan over medium high heat, add strawberry jam, balsamic glaze, and 1 cup of strawberries and cook for 4 to 5 minutes. Add pork and stir until pork is coated.
Top each shortcake or pound cake slice with a heaping mound of pork. Top with whipped cream and chopped strawberries. Enjoy!
